Stir in leeks and cook for 3 to 5 minutes or until slightly softened, stirring often. Stir in peas and stock; bring to boil. Reduce heat, cover and simmer 5 minutes or until vegetables are tender. Remove from heat. Purée until smooth with immersion blender or in standing blender. Return to pan to heat through, if necessary. Stir in mint; season with salt and pepper to taste.
